Flash Grilled Jerk Chicken with Spicy Sorrel Relish

Serves: 6

2-3 tsp Walkerswood Jerk Seasoning
6 Chicken breasts, skinless & boneless
1 Tbsp Olive oil

Pound breasts with mallet or large bottle until thin. Rub in Jerk seasoning and leave to marinate, refrigerated, for at least an hour.

Spicy Sorrel Relish

2 large Onions
1 Tbsp Butter
2 tsp Olive oil
1 clove Garlic, minced
  Salt to taste
1 bottle 7oz. Walkerswood Sorrel Chutney or other Fruit Chutney
½ cup Dry Red wine
½ tsp Orange zest
  Chopped parsley or cilantro for garnish

 

Cooking Instructions:

  • Heat butter and oil in pan and sauté onions & garlic until soft.
  • Add a dash of salt to season then the red wine. Simmer until liquid is reduced by half, then add Sorrel Chutney and simmer for 5 more minutes.
  • Add orange zest just before removing from heat.
  • Heat oil in grill pan and brown the chicken, about 3 minutes on each side, until cooked through. Serve chicken immediately with the sorrel relish.
  • Serve as an entrée or this chicken & relish also makes a great wrap or pita sandwich..
